Frantoio Scalia has been producing extra virgin olive oils from native Sicilian cultivars for three generations. Our production enhances the flavors that distinguish them, creating balanced and tasty blends and flavored oils capable of accompanying your favorite dishes and transforming them into gourmet recipes.

The classics

Our extra virgin olive oils tell and interpret the volcanic soil, the scent of the Mediterranean, the warmth of the Sicilian sun through aromas and flavors that envelop the 5 senses.

The olive

There are numerous native cultivars that the Sicilian territory offers. For the production of our oils, we have chosen the Cerasuola and Nocellara dell'Etna varieties, perfect for cultivation on the slopes of Etna and capable of restoring the flavors that strongly characterize the territory in which they are grown.
During the harvesting phase, the olives are further selected one by one, to guarantee the high quality standards that we demand from our oil.

The production

From the plantations to the table, every stage of the supply chain is strictly controlled. The olives, harvested strictly by hand, are transported to the mill within 24 hours, to keep their properties intact. Once the process has started, the oil is cold extracted using latest generation mechanisms capable of adapting to traditional production processes while respecting the environment.
