The oil mill
The Scalia oil mill was founded in 1950, in the fertile Etna area, when Antonino Scalia decided to bring new technologies to Eastern Sicily by choosing to innovate the structure with an electric traction system.
That of our family.
Since 1950, the oil mill has not simply been the location where we work every day to create a product of the highest quality: it is the place where our family wakes up every morning and spends its days, from moments of work to those of rest. Where we live from our passion and from a bond with the land of all time.
The structure was built on the ancient family lands, which were then passed from father to son. This is why we select and process the olives with care and respect for handed down values: we feel a deep connection with the soil and the plants because we grew up together.
This changes the meaning of every innovation, because the aim is not only to improve the system, but to protect the land which we consider in all respects part of the family.



Antonino and the first innovations
The choices of grandfather Antonino, who with his cunning and his gaze towards the future, innovated production with cutting-edge technologies for the historical period, left a mark not only on the mill but also on our entire family. What in 1971 was the first continuous cycle plant in southern Italy is today an ever-growing reality that still involves children and grandchildren today.
In fact, since 1983 the company has passed from Antonino to his son Carmelo, together with the values transmitted from father to son: innovation and respect for the territory and its traditions continue to be the cornerstone of the business.
A philosophy that combines tradition and innovation
Respecting traditions has never stopped us: our family has always believed in innovation, investing in the latest technologies to improve production and our oils.
The 2000s saw Carmelo follow in his father's footsteps: the plant was innovated with the latest generation mechanisms of the period, which allowed the temperature of the production process to be kept constant, below 27 degrees, and the product was cold extracted.
The son shows himself to be worthy of the family business, also introducing a system capable of avoiding the oxidation of the closed mixing tanks for processing the olive paste.
The variable speed crusher is the latest innovation of 2019. This new system allows you to adjust the processing speed based on the characteristics of the olive, thus preserving the quality of the raw material and obtaining a high quality finished product.
